Soufflé au fromage



ingredients:
70g unsalted butter
40g flour
40 cl milk
Goat cheese 50g
50g grated cheese
4 eggs
1 pinch of salt


Preparation
Put the butter in mixer bowl. Set the temperature to 100 ° C and the speed to blend 3.
When the butter is melted, install the flexible mixer and add flour. Set the temperature to 100 ° C and the speed to 1 mixture for 2 minutes.
Add milk. Set the temperature to 100 ° C and mix on speed 1 for 4 minutes.
Add goat cheese and Gruyere cheese in the bowl. Replace the thermostat to 0 ° C and adjust the minimum speed for 2 minutes.
Clear and cool béchamel at room temperature. Wash the bowl.
Install the whip and put the egg whites in the bowl of the robot. Add a pinch of salt and adjust the speed between 3 and 4 to mount the egg whites.
Preheat oven to 200 ° C.
Add the béchamel sauce and egg yolks in the bowl. Install flexible drummer and set the minimum speed for 2 minutes.
Brush your butter molds, using a brush (bottom up). Sprinkle with flour and remove excess by tapping.

Fill the molds three-quarters and bake for 20-30 minutes at 200 ° C without opening the oven. Serve immediately.
